Courgette soup
Ingredients
for 4 person
1 tbsp | olive oil |
1 | onion, finely chopped |
3 | courgettes, chopped |
7 dl | vegetable bouillon |
150 g | cream cheese (e.g. with herbs) |
salt and pepper to taste |
How it's done
Soup
Heat the oil in a pan. Sauté the onion for approx. 3 mins. Add the courgettes and cook for approx. 5 minutes. Add the stock and cook the vegetables for approx. 15 minutes until soft. Add the cream cheese, puree until smooth, heat gently and season.
