Fruit leather is the perfect alternative to gummy bears and all those other tasty yet super sugary nibbles! For this recipe I have simply used rice syrup as a sweetener. Other than that, I've relied entirely on the sweetness of the fruit itself. This snack is ideal for taking to the pool or lake (I've ruined a number of bags in summer with melted chocolate) and it's also a hit with the kids. My tip: Mango and strawberries are also a great choice for fruit leather and if you're looking for something creamy, simply mix the fruit with a little soya yoghurt.

Lara - Vanillacrunnch

Ingredients

for 16 pieces

apple (approx. 130 g), peeled, diced
2 tbsp rice syrup
1 tsp lemon juice
½ dl water
1 pinch ground cloves
1 pinch cinnamon
400 g raspberries

How it's done

Bring the apple, rice syrup, lemon juice, water and spices to the boil, simmer over a low heat for approx. 10 mins., leave to cool. In a blender, puree the mixture with the raspberries until smooth. Transfer to a tray lined with baking paper and smooth down.

Bake/dry for approx. 4 hrs. in an oven preheated to 60 °C (convection).

Use your finger to test whether the surface of the puree is dry. If it is still sticky, dry in the oven for a further 30-60 mins., leave to cool.

Cut the fruit leather and baking paper into approx. 16 strips.
