Scaloppine al limone

Ingredients

for 4 person

Meat
600 g veal steaks (e.g. sirloin)
  olive oil for frying
¾ tsp salt
a little  pepper
Sauce
organic lemons, a little grated zest, all of the juice (approx. 150 ml)
1 ½ dl vegetable bouillon
1 tbsp butter, soft
1 tbsp white flour
  salt and pepper to taste

How it's done

Meat

Flatten the steaks a little. Heat the oil in a frying pan, fry the steaks in batches for 1-2 mins. on each side. Season the steaks, keep warm.

Sauce

Add the lemon zest, lemon juice and stock, bring to the boil, reduce the heat. Mix the butter and flour, add them to the pan while stirring, simmer for approx. 5 mins. Add the steaks to the pan with the resulting cooking juices, season and heat gently.
