Feta couscous with peach
Ingredients
for 2 person
| 100 g | couscous |
| ¼ tsp | salt |
| 1 ½ dl | water, boiling |
| ½ tbsp | olive oil |
| 2 | peach, sliced |
| 3 tbsp | white balsamic vinegar |
| 3 tbsp | olive oil |
| ¼ tsp | salt |
| a little | pepper |
| 100 g | feta, diced |
| 50 g | rocket |
How it's done
Couscous
Mix the couscous and salt in a bowl. Pour boiling water over the couscous, cover and leave to absorb for approx. 5 mins. Separate with a fork.
Salad
Heat the oil in a non-stick frying pan, fry the peaches for approx. 3 mins. on each side. Whisk together the balsamic and oil in a bowl, season. Mix the feta, rocket and couscous with the dressing, plate up with the peaches.
