Courgette salad with beef

Ingredients

for 2 person

To fry
1 tbsp oil
courgette, cut into approx. 5 mm slices
480 g cooked corn cob, corn removed
¼ tsp salt
1 tbsp olive oil
200 g rump steak, sliced
¼ tsp salt
Salad
3 tbsp olive oil
2 tbsp lemon juice
¼ tsp salt
a little  pepper

How it's done

To fry

Heat the oil in a frying pan, fry the courgette and corn cobs in batches for approx. 3 mins., remove, season with salt and set aside. Add the oil. Salt the meat, stir fry in the same pan for approx. 2 mins.

Salad

Whisk together the oil and lemon juice, season. Mix with the vegetables and meat.
