Courgette salad with beef
Ingredients
for 2 person
| 1 tbsp | oil |
| 2 | courgette, cut into approx. 5 mm slices |
| 480 g | cooked corn cob, corn removed |
| ¼ tsp | salt |
| 1 tbsp | olive oil |
| 200 g | rump steak, sliced |
| ¼ tsp | salt |
| 3 tbsp | olive oil |
| 2 tbsp | lemon juice |
| ¼ tsp | salt |
| a little | pepper |
How it's done
To fry
Heat the oil in a frying pan, fry the courgette and corn cobs in batches for approx. 3 mins., remove, season with salt and set aside. Add the oil. Salt the meat, stir fry in the same pan for approx. 2 mins.
Salad
Whisk together the oil and lemon juice, season. Mix with the vegetables and meat.
