Almond porridge with hot berries

There's nothing better than enjoying a warm bowl of porridge for breakfast on a cold winter's day. So what are you waiting for? This creamy almond porridge is incredibly satisfying and will give you the energy you need to make it through the day. The warm berries on top not only dissolve beautifully into the porridge but will also melt your heart!

Ingredients

for 2 person

Porridge
2 dl water
2 dl almond drink
¼ tsp Himalayan salt
140 g rolled oats
2 tbsp white almond cream
1 tsp vanilla paste
3 tsp honey (or maple syrup)
1 ¼ dl almond drink
Berries
300 g mixed berries, fresh or frozen
1 tbsp water
2 tsp maple syrup
Toppings
figs, sliced
2 tbsp Granola
2 tsp maple syrup

How it's done

Porridge

Bring the water, almond milk and salt to the boil. Add the rolled oats, bring to the boil, reduce the heat, cook over a medium heat for approx. 5 mins., stirring occasionally. Stir in the almond butter, vanilla paste and honey, turn off the hob. Stir in the remainder of the almond milk. Divide the porridge into 2 bowls.

Berries

Bring the berries, water and maple syrup to the boil, reduce the heat, cook over a medium heat for approx. 3 mins. until the berries are soft, then mash with a fork. Top the porridge with the berries.

Toppings

Top with the figs, scatter the granola over the top and drizzle with the maple syrup.
