Almond porridge with hot berries
Ingredients
for 2 person
| 2 dl | water |
| 2 dl | almond drink |
| ¼ tsp | Himalayan salt |
| 140 g | rolled oats |
| 2 tbsp | white almond cream |
| 1 tsp | vanilla paste |
| 3 tsp | honey (or maple syrup) |
| 1 ¼ dl | almond drink |
| 300 g | mixed berries, fresh or frozen |
| 1 tbsp | water |
| 2 tsp | maple syrup |
| 2 | figs, sliced |
| 2 tbsp | Granola |
| 2 tsp | maple syrup |
How it's done
Porridge
Bring the water, almond milk and salt to the boil. Add the rolled oats, bring to the boil, reduce the heat, cook over a medium heat for approx. 5 mins., stirring occasionally. Stir in the almond butter, vanilla paste and honey, turn off the hob. Stir in the remainder of the almond milk. Divide the porridge into 2 bowls.
Berries
Bring the berries, water and maple syrup to the boil, reduce the heat, cook over a medium heat for approx. 3 mins. until the berries are soft, then mash with a fork. Top the porridge with the berries.
Toppings
Top with the figs, scatter the granola over the top and drizzle with the maple syrup.
