Vegan protein balls with dark chocolate

These simple chocolate balls contain just 8 ingredients and don't require an oven or a blender! Not only do these little treats taste unbelievably good, they are also full of protein and good fats thanks to the almonds and nuts. Coated in dark chocolate and containing little drops of jam, these protein balls are a must for any chocolate lover.

Lara - Vanillacrunnch

Ingredients

for 12 pieces

Jam filling
50 g jam (of your choice)
Mixture
120 g peanut butter
50 g margarine
30 g icing sugar
10 g coconut flour
140 g ground almonds
1 tsp vanilla paste
Glaze
100 g dark chocolate, chopped
2 tsp coconut oil

How it's done

Jam filling

Using a teaspoon, spoon 12 drops of jam onto a baking tray lined with baking paper. Freeze for approx. 2 hrs.

Mixture

Mix all of the ingredients thoroughly in a bowl (if the mixture is too soft, chill for approx. 20 mins. or add a few more almonds).

Divide the mixture into 12 portions, flatten slightly. Place 1 frozen drop of jam on top of each portion, wrap the mixture around the jam and shape into balls. Place the balls on a tray and freeze for at least 2 hrs.

Glaze

Melt the chocolate and coconut oil in a bain-marie. Dip the balls individually into the chocolate, leave to dry on a rack.
