Filled everything bagel
Ingredients
for 12 pieces
| 500 g | white flour |
| ¾ tsp | salt |
| ¼ cube | yeast (approx. 10 g), crumbled |
| 3 dl | milk |
| 1 | egg white, beaten |
| 3 tbsp | liquid honey |
| 2 tbsp | olive oil |
| 1 tbsp | blue poppy seeds |
| 1 tbsp | sesame seeds |
| 2 tbsp | dried onion, coarsely crushed |
| ½ tsp | garlic granules |
| ½ tsp | sea salt |
| 2 litre | salted water |
| 3 tbsp | honey |
| 1 tbsp | sodium bicarbonate |
| oil for frying | |
| 2 | flank Steak (each approx. 160 g) |
| ½ tsp | salt |
| a little | pepper |
| 200 g | cream cheese (e.g. Philadelphia) |
| 50 g | baby lettuce |
How it's done
Dough
Mix the flour, salt and yeast in a bowl. Add the water and all the other ingredients up to and including the oil, knead to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 1½ hrs. until doubled in size.
Everything bagel mix
Mix the blue poppy seeds with all the other ingredients up to and including the salt.
To shape
Shape the dough into a roll, cut into 12 pieces and shape into balls. Lightly flour the handle of a wooden spoon and make a hole in the centre of each. Allow the dough rings to form around the spoon handle until the opening measures approx. 4 cm in diameter. Place the bagels on a baking tray lined with baking paper, cover and leave to rise for approx. 15 mins. Bring the salted water, honey and sodium bicarbonate to the boil, cook the bagels 3 at a time in just-boiling water for approx. 12 secs. Remove with a slotted spoon, drain thoroughly and return to the baking paper. Sprinkle with the everything bagel mix.
Bake for approx. 15 mins. in the centre of an oven preheated to 220°C.
Remove the bagels from the oven, leave to cool on a rack, cut open.
Meat
Heat the oil in a frying pan. Fry the meat for approx. 1 1/2 mins. on each side. Season the steaks, cover and leave to rest for approx. 5 mins., carve into thin slices.
Bagels
Halve the bagels crosswise, spread with cream cheese, fill the bagels with meat and baby lettuce.
