Chicken with smoked almond-feta crumbs
Ingredients
for 2 person
| 50 g | smoked almonds, finely chopped |
| 50 g | feta, crumbled |
| 1 tsp | dried oregano |
| 4 | chicken drumsticks |
| ½ tsp | salt |
| a little | pepper |
| 2 tbsp | balsamic vinegar |
| 2 tbsp | olive oil |
| ¼ tsp | salt |
| a little | pepper |
| 100 g | baby lettuce |
How it's done
Smoked almond-feta crumbs
Mix the smoked almonds, feta and oregano.
Charcoal/gas/electric grill:
Grill the chicken on a high heat/at the highest level (approx. 220 °C for approx. 6 mins. on each side.
Salad
Combine the vinegar and oil in a bowl, season, toss with salad. Serve with chicken and almond-feta crumbs.
