Blackberry frozen yoghurt

Ingredients

for 6 person

Blackberry mixture
80 g blackberry
½ dl gin
2 tbsp icing sugar
Sugar syrup
organic lemon
100 g sugar
Yoghurt mixture
600 g plain greek yoghurt plain
70 g blackberry

How it's done

Blackberry mixture

Heat the blackberries, gin and icing sugar in a pan, cover and simmer for approx. 5 mins.

Puree the blackberry mixture, leave to cool.

Sugar syrup

Grate the lemon zest, squeeze out the juice, bring both to the boil along with the sugar, simmer until all the sugar has dissolved, leave to cool.

Yoghurt mixture

Mix the yoghurt with the sugar syrup, transfer to a stainless steel bowl, cover and freeze for approx. 4 hrs., stirring approx. 5 times.

Carefully fold the blackberry mixture into the yoghurt mixture, cover and freeze for approx. 3 hrs.

Halve the blackberries, serve with the frozen yoghurt.
