Mackerel with pistachio salsa verde
Ingredients
for 4 person
4 | mackerel, pre-ordered at the fish counter, filleted |
1 tbsp | olive oil |
1 | organic lemon, use half of the grated zest, set aside all of the juice |
½ tsp | salt |
a little | pepper |
3 tbsp | olive oil |
1 bunch | flat-leaf parsley, finely chopped |
30 g | unsalted, shelled pistachios, finely chopped |
30 g | capers, finely chopped |
½ tsp | sea salt |
a little | pepper |
How it's done
Mackerel
Rinse the mackerel (inside and out) in cold water, pat dry. Combine the oil with 1 tbsp of lemon juice and lemon zest, season. Use the mixture to coat the mackerel inside and out.
Salsa verde
Combine the oil with the remainder of the lemon juice (approx. 2 tbsp), parsley, pistachios and capers, season.
To grill
Charcoal/gas/electric grill: Cover and grill the mackerel over/on a medium heat (approx. 200 °C for approx. 10 mins. on each side. Serve with the pistachio salsa verde.
