Pina Colada cubes

Ingredients

for 10 pieces

Pineapple mixture
½  pineapple, cut into pieces (yields approx. 400 g)
¾ dl water
1 tbsp white rum
40 g sugar
Coconut mixture
2 ½ dl coconut milk
1 ½ tbsp white rum
80 g sugar

How it's done

Pineapple mixture

Mix the pineapple, water, rum and sugar in a pan, bring to the boil, cover and simmer gently for approx. 2 mins. Puree the mixture and press through a sieve, leave to cool.

Coconut mixture

Mix the coconut milk, rum and sugar in the prepared dish. Cover and freeze the mixture for approx. 3 hrs., stirring twice with a whisk. Spread the pineapple mixture over the top, cover and freeze for approx. 6 hrs. Remove the mixture from the dish and cut into approx. 5 cm cubes.
