Filled cheese tortillas
Ingredients
for 8 person
| 200 g | Appenzeller cheese, coarsely grated |
| 1 | mozzarella (approx. 150 g), cut into pieces |
| 8 | wheat tortillas |
| 100 g | cherry tomatoes, sliced |
| 1 | spring onion incl. green part, cut into thin rings |
| 1 tbsp | coriander, finely chopped |
| salt and pepper to taste |
| 1 | lime, cut into wedges |
| a little | coriander, torn |
How it's done
Filling
Spread the cheese over 4 tortillas, top with the cherry tomatoes, spring onions and coriander, season. Place the remaining tortillas on top.
Charcoal/gas/electric grill
Cover and grill over/on a low heat (approx. 180 °C for approx. 2 mins. on each side. Serve the lime wedges and coriander with the tortillas.
