Gigantes Plaki is a classic Greek dish comprising butter beans cooked in a delicious homemade tomato sauce. This dish takes time – but it's so worth it! The sauce is made using chopped tinned tomatoes, onions, garlic and all manner of delicious spices. It is then baked in the oven for an hour with the beans. This intensifies the individual flavours.

Ingredients

for 4 person

Plaki
200 g dried white beans soaked for approx. 12 hrs., drained
1 ½ litre water, boiling
2 tbsp olive oil
red onion, finely chopped
garlic cloves, finely chopped
1 tbsp tomato puree
1 tsp dried oregano
1 tsp cinnamon
¼ tsp chilli powder
800 g chopped tomatoes
3 dl water
1 ½ tsp salt
a little  pepper
To bake
2 tbsp parsley, finely chopped

How it's done

Plaki

Simmer the soaked beans in water for approx. 1 hr. until soft, drain. Heat the olive oil in a large pan, sauté the onion and garlic for approx. 5 mins. Add the tomato puree, oregano, cinnamon and chilli powder, cook briefly. Add the tomatoes and water, bring to the boil, season and simmer for several minutes. Add the beans, transfer all of the ingredients to the dish.

To bake

Approx. 1 hr. in the centre of an oven preheated to 180°C. Garnish with parsley before serving.
