Almond waffles with berries
Ingredients
for 4 person
300 g | mixed berries |
1 tbsp | coarse cane sugar |
1 tbsp | lemon juice |
150 g | light spelt flour |
50 g | ground almonds |
80 g | coarse cane sugar |
½ tbsp | baking powder |
1 pinch | salt |
2 | fresh eggs |
150 g | dark almond cream |
1 ½ dl | milk |
clarified butter for baking |
How it's done
Berries
Combine the berries, sugar and lemon juice, set aside.
Waffle batter
In a bowl, mix the flour with all the other ingredients up to and including the salt. Mix together the eggs, almond cream and milk, stir in. Cover the batter and leave to stand at room temperature for approx. 30 mins.
Bake
Heat the waffle iron, brush with a little clarified butter. Use 1 heaped tablespoon of batter per waffle, spoon onto the waffle iron, cook each waffle for approx. 3 mins. Remove, allow to cool a little on a rack, serve warm with the berries.
