Edamame salad
Ingredients
for 2 person
| 2 tbsp | olive oil |
| 1 | lime, rinsed with hot water, dabbed dry, use grated zest and juice |
| ½ tsp | salt |
| a little | pepper |
| 120 g | edamame (e.g. Karma), rinsed, drained |
| 1 | mango, diced |
| ½ | cucumber, diced |
How it's done
Combine the oil, lime zest and juice in a bowl, season. Add the edamame, mango and cucumber, mix together.
