Baked apple and chia pudding trifle

Sometime towards the end of the year there always comes a point where I have to admit to myself that I'm addicted. Addicted to spiced biscuits and Christmas spices in every dessert creation going. In this particular recipe, the subtle aroma of cinnamon is paired with the fruity aroma of apples, exotic turmeric and a hint of vanilla from the yoghurt. This baked apple and chia pudding trifle is just heavenly!

Ingredients

for 4 person

Baked apple and chia pudding
2 tbsp chia seeds
2 dl almond drink
1 tsp turmeric
1 tbsp maple syrup
25 g margarine
30 g cane sugar
apples, peeled, cored, cut into pieces
½ tsp gingerbread spice
To serve & decorate
80 g biscuit (e.g. VEGANZ Mini Spekulatius)
300 g coconut milk yoghurt (e.g. vanilla)
40 g dried apple rings

How it's done

Baked apple and chia pudding

Combine the chia seeds with the almond milk, turmeric and maple syrup. Cover and leave to absorb for at least 2 hrs. or overnight. Melt the margarine in a small pan, add the sugar, apples and gingerbread spice, bring to the boil, reduce the heat, simmer over a low heat for approx. 10 mins., leave to cool. Roughly puree the mixture, mix into the chia pudding.

To serve & decorate

Crumble three-quarters of the biscuits, layer the biscuit crumbs, baked apple chia pudding, yoghurt and apple rings alternately in 4 glasses, decorate with the apple rings and remaining biscuits.
