Pan-fried lettuce with a sweet and spicy salsa
Ingredients
for 2 person
6 | baby lettuce, halved lengthwise |
2 tbsp | olive oil |
½ tsp | salt |
3 tbsp | white wine vinegar |
3 tbsp | olive oil |
¼ tsp | salt |
a little | pepper |
1 | spring onion incl. green part, cut into thin rings |
½ | red chilli pepper, deseeded, finely chopped |
4 | Medjool date, cut into strips |
How it's done
Lettuce
Mix the lettuce with the oil and salt, fry in batches in a non-stick frying pan for approx. 1 min. on each side, allow to cool slightly.
Salsa
Mix the vinegar with the oil, salt and pepper. Add the spring onions and chilli pepper, mix. Drizzle the salsa over the lettuce, top with the dates.
