Schenkeli (Carnival cookies)
Ingredients
for 40 pieces
| 150 g | butter, soft |
| 250 g | sugar |
| ¼ tsp | salt |
| 4 | eggs |
| 1 | organic orange, use grated zest only |
| 500 g | white flour |
| 1 ¼ tsp | baking powder |
| oil, for deep-frying | |
| icing sugar, to dust |
How it's done
Dough
Place the butter in a bowl, whisk in the sugar and salt. Add the eggs one at a time and continue to whisk until the mixture becomes lighter in colour. Stir in the orange zest. Mix the flour and baking powder, add and carefully combine to form a soft dough. Cover and refrigerate for approx. 1 hr.
To shape
On a lightly floured surface, shape the dough into rolls (approx. 2 cm in diameter), cut the rolls diagonally into pieces approx. 3 cm long. Shape into Schenkeli, make an incision lengthwise (approx. 2 mm deep) using a knife.
To deep-fry
Fill a pot to ⅓ with oil and heat it to approx. 160°C. Slide the Schenkeli into the oil using a slotted spoon, fry for approx. 2 mins. until golden brown, turning occasionally. Remove from the oil, drain on kitchen paper, dust with icing sugar and leave to cool on a rack.
