Quarkini
Ingredients
for 24 pieces
| 2 | fresh egg |
| 100 g | sugar |
| 1 parcel | vanilla sugar |
| 250 g | low-fat quark |
| 250 g | white flour |
| 1 tsp | baking powder |
| 1 tsp | sodium bicarbonate |
| 4 tbsp | sugar |
| ½ tsp | cinnamon |
| oil for deep-frying |
How it's done
Dough
Using the whisk on a hand mixer, beat the eggs, sugar and vanilla sugar in a bowl for approx. 3 mins. until light and fluffy. Stir in the quark. Mix the flour, baking powder and sodium bicarbonate, mix quickly into the quark mixture.
Quarkini
Mix the sugar and cinnamon in a deep dish, set aside. With lightly floured hands, shape the dough into balls (approx. 4 cm in diameter). Heat the oil in a cooking pot to 180°C. Deep fry the balls in batches for approx. 5 mins. Remove the quarkini with a slotted spoon, drain on kitchen paper, toss in the cinnamon sugar while still warm.
