Roasted spiced strawberries

Roasted fruit is one of my favourite desserts as it's so easy to prepare and yet always tastes delicious. Even your guests will be impressed, as roasted fruit is something of a novelty. It's important to have a good spice mix for that extra flavour kick and with just a handful of ingredients you can whip up an incredible dessert. As strawberry season is currently in full swing, I have chosen roasted strawberries for today's recipe. For the perfect finishing touch, I have added a heavenly combination of pink pepper, coconut palm sugar and ginger.

Ingredients

for 2 person

Roasted berries
½ cm ginger, finely grated
2 tbsp coconut palm sugar
2 pinch bourbon vanilla powder
½  lemon, use only the juice
10  preserved pink peppercorns rinsed, drained, crushed
300 g strawberries, halved
To serve
2 tbsp coconut milk yoghurt
2 tsp pistachios
some  preserved pink peppercorns, rinsed, drained

How it's done

Roasted berries

In a bowl, mix the ginger with all the other ingredients up to and including the pepper. Add the strawberries, mix, spread on a baking tray lined with baking paper.

Roast for approx. 20 mins. in the centre of an oven preheated to 180°C.

To serve

Serve the berries while still warm, decorate with the yoghurt, pistachios and pepper.
