Roasted spiced strawberries
Ingredients
for 2 person
| ½ cm | ginger, finely grated |
| 2 tbsp | coconut palm sugar |
| 2 pinch | bourbon vanilla powder |
| ½ | lemon, use only the juice |
| 10 | preserved pink peppercorns rinsed, drained, crushed |
| 300 g | strawberries, halved |
| 2 tbsp | coconut milk yoghurt |
| 2 tsp | pistachios |
| some | preserved pink peppercorns, rinsed, drained |
How it's done
Roasted berries
In a bowl, mix the ginger with all the other ingredients up to and including the pepper. Add the strawberries, mix, spread on a baking tray lined with baking paper.
Roast for approx. 20 mins. in the centre of an oven preheated to 180°C.
To serve
Serve the berries while still warm, decorate with the yoghurt, pistachios and pepper.
