Küttiger carrot bowl
Ingredients
for 2 person
2 ½ dl | water |
¼ tsp | salt |
100 g | yellow millet |
1 tbsp | olive oil |
1 tbsp | olive oil |
2 | Küttiger carrot, halved lengthwise, sliced diagonally |
2 tbsp | water |
1 tbsp | white wine vinegar |
1 tsp | sugar |
¼ tsp | salt |
4 | burrata piccola (each approx. 50 g) |
1 | blood orange, peeled, sliced |
1 tbsp | olive oil |
salt and pepper to taste |
How it's done
Yellow millet
Bring the water and salt to the boil, add the yellow millet, simmer over a low heat for approx. 10 mins. Remove the pan from the heat, cover the yellow millet and allow to absorb for approx. 10 mins. (without lifting the lid), allow to cool slightly. Stir in the oil.
Carrots
Heat the oil in a frying pan, add the carrots, gently sauté for approx. 5 mins. Add the water, vinegar, sugar and salt, cover and simmer for approx. 5 mins., remove the lid and cook for a further 2 mins.
Bowl
Serve the yellow millet, carrots, burrata and blood orange in a bowl, drizzle oil over the burrata, season.
