Ingredients

for 4 person

80 g chorizo sliced, (spicy)
baguette, quartered, halved lengthwise
1 glass grilled vegetables in oil (approx. 285 g), drained, larger pieces cut in half
150 g mozzarella, sliced

How it's done

Slowly fry the chorizo in batches in a non-stick frying pan until crispy, then drain on kitchen paper. Toast the bread (cut side down) in batches in the same pan for approx. 2 mins. Top the sandwich bases with the grilled vegetables, mozzarella and chorizo. Cover with the top half of the bread, press down gently.
