Sweet potato and apple salad
Ingredients
for 2 person
| 1 tbsp | olive oil |
| 2 tbsp | white wine vinegar |
| ¼ tsp | salt |
| a little | pepper |
| 1 tbsp | olive oil |
| 1 | sweet potato (approx. 400 g), diced |
| ¼ tsp | salt |
| a little | pepper |
| 140 g | pomegranate seeds |
| 1 | apple (e.g. Gravenstein), diced |
| 90 g | rocket |
How it's done
Dressing
Mix the oil and vinegar in a large bowl, season.
Salad
Heat the oil in a non-stick frying pan, sauté the sweet potato for approx. 10 mins., season, allow to cool slightly. Add to the dressing along with the pomegranate seeds, apple and rocket, mix.
