Sweet apple soup with semolina gnocchi
Ingredients
for 4 person
| 2 ½ dl | milk |
| 30 g | butter |
| 1 parcel | vanilla sugar |
| 1 pinch | salt |
| 60 g | durum wheat semolina |
| 1 tbsp | butter |
| 4 | apple (e.g. Gravensteiner, approx. 700 g), peeled, cored, cut into pieces |
| 1 | star anise |
| 1 | cinnamon stick |
| 60 g | sugar |
| ½ dl | white wine |
| 1 dl | water |
| 1 tbsp | lemon juice |
| 2 ½ dl | buttermilk |
| 1 | apple, thinly sliced |
| cinnamon to dust |
How it's done
Semolina gnocchi
Bring the milk to the boil along with the butter, vanilla sugar and salt. Stir in the semolina, bring to the boil. Reduce the heat, simmer for approx. 5 mins., stirring occasionally, allow to cool slightly. Shape the mixture into walnut-sized balls using a coffee spoon.
Apple soup
Heat the butter in a pan. Add the apples, star anise and cinnamon, sauté for approx. 5 mins. Add the sugar and white wine, cook for a further 2 mins. Pour in the water and lemon juice, cover and cook for approx. 10 mins. until soft. Remove the star anise and cinnamon, allow to cool slightly, pour in the buttermilk, puree until smooth. Serve the soup lukewarm, top with the semolina gnocchi and apple slices, dust with cinnamon.
