Energy balls are great for curbing hunger pangs between meals. I love them! They're practical, healthy and make a great hiking snack! They are full of healthy, natural ingredients and the lemon zest gives these little balls a fresh, citrusy aroma. Their flavour is incredibly intense and provides a wonderfully fresh kick. These energy balls take less than 10 minutes to prepare and if you stock up on them, you'll have plenty to nibble on for the whole of next week, too!

Ingredients

for 16 pieces

Mixture
40 g almonds
35 g rolled oats
200 g Medjool date, pitted
150 g peanut butter (creamy)
1 tbsp coconut flake
organic lemon, use only the grated zest
1 pinch sea salt
To shape into balls
2 tbsp coconut flake

How it's done

Mixture

Blitz the almonds and oats in a food processor. Add the dates and all the other ingredients and continue mixing to form a compact, malleable mixture.

To shape into balls

Divide the mixture into 16 portions, shape into balls with wet hands and then toss the balls into the dessicated coconut.
