Lemon and coconut energy balls
Ingredients
for 16 pieces
40 g | almonds |
35 g | rolled oats |
200 g | Medjool date, pitted |
150 g | peanut butter (creamy) |
1 tbsp | coconut flake |
1 | organic lemon, use only the grated zest |
1 pinch | sea salt |
2 tbsp | coconut flake |
How it's done
Mixture
Blitz the almonds and oats in a food processor. Add the dates and all the other ingredients and continue mixing to form a compact, malleable mixture.
To shape into balls
Divide the mixture into 16 portions, shape into balls with wet hands and then toss the balls into the dessicated coconut.
