What I particularly love about summer is the fact that watermelon is so readily available. There's nothing better than a large bowl of ice-cold watermelon slices on a summer morning. The idea for this drink came to me when I was thinking of new ways to use this fabulous fruit while it's still in season. The soft texture and natural sweetness provide a wonderful contrast to the acidic freshness of the lime. The herbs go beautifully with the flavour of the watermelon but if you're not keen, simply leave them out. This cooler is a super quick summer recipe for the whole family. After all, who wants to stand around in the kitchen when you can be splashing around outside!

Ingredients
for 4 person
| 1 kg |
watermelon, deseeded, cut into pieces |
| 1 |
lime, the whole juice |
| 5 |
basil leaves |
| 3 |
peppermint leaves |
How it's done
Puree the melon and lime juice in a blending cup until smooth. Add the herbs, puree again. Refrigerate until ready to serve.
