Blue cheese raclette with Lillet apples
Ingredients
for 4 person
2 dl | Lillet Blanc |
1 ½ tbsp | sugar |
1 | lime, rinsed with hot water, dabbed dry, use grated zest and juice |
1 | star anise |
1 | vanilla pod, seeds scraped out |
2 | apples, cut into segments |
200 g | raclette cheese in slices (e.g. Blue cheese) |
20 g | fried onions |
How it's done
Lillet apples
Bring the Lillet and water to the boil along with all the other ingredients up to and including the vanilla pod and seeds. Add the apples, reduce the heat, cover and simmer for approx. 10 mins. until just soft, leave to cool in the liquid.
Raclette
Place the raclette cheese and apples in the raclette pans, melt under a raclette grill for approx. 8 mins. Top with the fried onions.
