Vegetable berry bowl
Ingredients
for 2 person
4 tbsp | dried aronia berries |
4 tbsp | dried blackcurrants |
1 dl | water, hot |
100 g | courgette, diced |
¼ g | cucumber, diced |
4 | pitted dates |
50 g | frozen chopped spinach |
3 tbsp | whole-grain rolled oats |
2 dl | coconut milk |
¼ tsp | salt |
a little | pepper (e.g. Exotic Mix) |
2 tsp | mixed seeds |
How it's done
Berries
Place the berries in a bowl, pour over the water and leave to soak for approx. 30 mins.
Bowl
Put half the berries to one side, and add the rest to the blender jug with the water used for soaking. Add the courgettes and the remaining ingredients up to and including the pepper. Blend. Divide between two bowls, and sprinkle the remaining berries and the seed mix on top.
