Vegetable berry bowl

This is a bowl for real champions! It uses Naturaplan’s Bio Campiuns:– vitamin-packed aronia berries and cassis – two tasty Swiss superfoods. The bowl essentially consists of courgettes, cucumber, spinach and oats. But depending on personal preferences and the season, there’s plenty of scope for varying the ingredients. I don’t use any conventional milk products, and instead I top up the ingredients in the blender with coconut milk. I find the pepper livens things up a bit, but you can leave it out if you wish.

Ingredients

for 2 person

Berries
4 tbsp dried aronia berries
4 tbsp dried blackcurrants
1 dl water, hot
Bowl
100 g courgette, diced
¼ g cucumber, diced
pitted dates
50 g frozen chopped spinach
3 tbsp whole-grain rolled oats
2 dl coconut milk
¼ tsp salt
a little  pepper (e.g. Exotic Mix)
2 tsp mixed seeds

How it's done

Berries

Place the berries in a bowl, pour over the water and leave to soak for approx. 30 mins.

Bowl

Put half the berries to one side, and add the rest to the blender jug with the water used for soaking. Add the courgettes and the remaining ingredients up to and including the pepper. Blend. Divide between two bowls, and sprinkle the remaining berries and the seed mix on top.
