Honey and cucumber salad with Mostbröckli tartare

Ingredients

Mostbröckli tartare
200 g tomatoes, deseeded, diced
120 g Mostbröckli (beef sausage), finely chopped
2 tbsp crème fraîche
  salt and pepper to taste
Honey and cucumber salad
2 tsp honey mustard
3 tbsp rapeseed oil
2 tbsp apple vinegar
cucumber, shaved into long strips using a peeler (to the core)
  salt and pepper to taste
1 tbsp liquid honey

How it's done

Mostbröckli tartare

Mix the tomatoes, Mostbröckli and crème fraîche, season.

Honey and cucumber salad

Combine the mustard, oil and vinegar in a bowl. Add the cucumber, mix and season. Serve the salad with the tartare, drizzle with honey prior to serving.
