Berry prosecco mojito
Ingredients
for 4 glasses
250 g | blackberries (50 g set aside, the rest crushed) |
250 g | blueberries (50 g set aside, the rest crushed) |
125 g | cane sugar |
¾ dl | water |
1 | lime, rinsed with hot water, dabbed dry, use a little grated zest and all of the juice |
¾ dl | white rum |
ice cube, crushed | |
6 dl | Prosecco |
8 | peppermint leaves |
4 | basil leaves |
How it's done
Berry syrup
Place the berries, sugar and water in a small pan, bring to the boil while stirring. Reduce the heat, simmer for approx. 5 mins., leave to cool, chill for at least 30 mins.
Mojitos
Puree the berry syrup, lime zest, lime juice and rum until smooth, pour into the glasses. Add the ice and reserved berries to the glasses, top up with the prosecco, garnish with herbs.
