Salad with mozzarella, nectarines and rocket

Ingredients

for 4 person

Salad
90 g rocket
nectarines (or peaches), cut into segments
300 g mozzarella, drained, cut into cubes
Dressing
1 tbsp Dijon mustard
2 tbsp red wine vinegar
2 tbsp rapeseed oil
½ dl vegetable bouillon, cold
1 tbsp apricot jam
  salt and pepper to taste

How it's done

Salad

Serve the rocket, nectarines and mozzarella in bowls or on plates.

Dressing

Mix all the ingredients together well, drizzle over the salad before serving.
