Salad with mozzarella, nectarines and rocket
Ingredients
for 4 person
90 g | rocket |
2 | nectarines (or peaches), cut into segments |
300 g | mozzarella, drained, cut into cubes |
1 tbsp | Dijon mustard |
2 tbsp | red wine vinegar |
2 tbsp | rapeseed oil |
½ dl | vegetable bouillon, cold |
1 tbsp | apricot jam |
salt and pepper to taste |
How it's done
Salad
Serve the rocket, nectarines and mozzarella in bowls or on plates.
Dressing
Mix all the ingredients together well, drizzle over the salad before serving.
