Corn salad
Ingredients
for 4 person
| 2 tbsp | natural soya (or natural yoghurt) |
| 1 tsp | tahini (sesame paste) |
| 1 | lime, rinsed with hot water; use grated zest and juice |
| ½ tsp | salt |
| a little | pepper |
| 1 tin | corn kernels (285 g), drained |
| ⅓ | cucumber (organic), diced |
| ⅓ | radish, diced |
| ⅓ bunch | coriander, finely chopped |
| 20 leaf | peppermint, finely chopped |
How it's done
Dressing
Mix all the ingredients well.
Salad
Mix all the ingredients in a bowl. Add the dressing, mix well. Cover and refrigerate until ready to serve.
