Oriental couscous
Ingredients
for 2 person
2 tbsp | olive oil |
1 | red pepper, diced |
1 | aubergine, diced |
½ tsp | salt |
100 g | couscous |
¼ tsp | salt |
1 ½ dl | water, boiling |
6 | pitted dates, finely chopped |
salt and pepper to taste |
How it's done
Vegetables
Heat the oil in a frying pan, sauté the vegetables for approx. 7 mins., season with salt, set aside.
Couscous
Mix the couscous and salt in a bowl. Pour boiling water over the couscous, cover and leave to absorb for approx. 5 mins. Separate with a fork. Mix with the vegetables and dates, season.
