Knöpfli with ham and vegetables
Ingredients
for 4 person
1 tbsp | clarified butter |
500 g | knöpfli egg noodles |
2 | spring onions incl. green parts, cut into rings |
160 g | ham in slices, sliced |
200 g | courgettes, sliced |
250 g | cherry tomatoes |
200 g | sour single cream |
1 dl | milk |
½ tsp | paprika |
a little | nutmeg |
1 tsp | salt |
a little | pepper |
40 g | medium-aged Appenzeller, grated |
How it's done
Knöpfli
Heat the clarified butter in a large frying pan, briefly fry the knöpfli. Add the spring onions and ham, fry briefly (reserve the greens for the garnish). Add the courgette, cook for approx. 3 mins., then add the tomatoes and cook briefly.
Sauce
Thoroughly mix the sour single cream with the milk, season. Add to the pan along with the cheese, heat through while stirring until the cheese has melted.
Garnish with the reserved onion greens prior to serving.
