Durum wheat salad with strawberries
Ingredients
for 4 person
5 tbsp | white balsamic vinegar |
3 tbsp | olive oil |
3 tbsp | pesto verde (green pesto) |
½ tsp | salt |
a little | pepper |
7 dl | salted water, boiling |
300 g | pre-cooked durum wheat (Ebly®) |
120 g | rocket |
250 g | strawberries, sliced |
125 g | Mozzarellas di bufala (buffalo mozzarella), torn into pieces |
How it's done
Dressing
Mix the balsamic, oil and pesto in a bowl, season.
Durum wheat
Place the durum wheat in the salted water, cover and simmer over a low heat for approx. 10 mins. until soft, drain. Add the durum wheat to the dressing while still slightly warm, mix.
Salad
Add the rocket and strawberries, mix. Serve the salad topped with the mozzarella.
