Durum wheat salad with strawberries

Ingredients

for 4 person

Dressing
5 tbsp white balsamic vinegar
3 tbsp olive oil
3 tbsp pesto verde (green pesto)
½ tsp salt
a little  pepper
Durum wheat
7 dl salted water, boiling
300 g pre-cooked durum wheat (Ebly®)
Salad
120 g rocket
250 g strawberries, sliced
125 g Mozzarellas di bufala (buffalo mozzarella), torn into pieces

How it's done

Dressing

Mix the balsamic, oil and pesto in a bowl, season.

Durum wheat

Place the durum wheat in the salted water, cover and simmer over a low heat for approx. 10 mins. until soft, drain. Add the durum wheat to the dressing while still slightly warm, mix.

Salad

Add the rocket and strawberries, mix. Serve the salad topped with the mozzarella.
