Pan-fried courgettes

Ingredients

for 2 person

1 tbsp olive oil
courgette (e.g. green and yellow), cut into approx. 5 mm slices
30 g pine nuts
¾ tsp salt
a little  pepper
½ bunch basil, coarsely chopped
½ bunch peppermint, coarsely chopped

How it's done

Heat the oil in a frying pan and pan-fry the courgettes for approx. 10 mins., stirring occasionally. Add the remaining ingredients, continue to cook for approx. 5 mins.
