Pan-fried courgettes
Ingredients
for 2 person
| 1 tbsp | olive oil |
| 2 | courgette (e.g. green and yellow), cut into approx. 5 mm slices |
| 30 g | pine nuts |
| ¾ tsp | salt |
| a little | pepper |
| ½ bunch | basil, coarsely chopped |
| ½ bunch | peppermint, coarsely chopped |
How it's done
Heat the oil in a frying pan and pan-fry the courgettes for approx. 10 mins., stirring occasionally. Add the remaining ingredients, continue to cook for approx. 5 mins.
