Mediterranean cod fillets
Ingredients
for 2 person
| 1 tbsp | olive oil |
| 2 | Royal cod fillet (MSC) (approx. 200 g each) |
| ½ tsp | salt |
| a little | pepper |
| 250 g | different coloured cherry tomatoes, quartered |
| 50 g | Kalamata olive, pitted |
| 30 g | capers |
| ¼ tsp | salt |
How it's done
Fish fillets
Heat the oil in a non-stick frying pan, fry the fish fillets for approx. 3 mins. on each side, season and keep warm.
Mediterranean salsa
Place the tomatoes, olives and capers in the same pan, stir fry for approx. 5 mins., season with salt. Spoon the salsa over the fish, serve.
