Wheat beer marinated sirloin steak
Ingredients
for 4 person
3 tbsp | thyme, finely chopped |
½ tsp | pepper |
4 | sirloin steak (approx. 140 g each) |
100 g | apricot, pitted, quartered |
2 | shallot, sliced |
3 sprig | thyme |
3 ⅓ dl | wheat beer |
1 tsp | liquid honey |
1 ½ tsp | Maizena cornflour |
1 tbsp | water |
½ tsp | salt |
a little | pepper |
½ tsp | sea salt |
How it's done
Marinade
Mix the thyme and pepper, rub the meat with the mixture and place in a dish. Add the apricots, shallots and thyme, pour over the beer, cover and marinate in the fridge for approx. 12 hrs. or overnight. Remove the meat from the marinade and pat dry.
Beer sauce
Pour the honey into a pan along with the marinade, apricots and shallots, bring to the boil, reduce for approx. 5 mins. Mix the cornflour with the water, add to the sauce while stirring, continue to cook for approx. 3 mins. Remove the thyme, season.
To grill
Charcoal/gas/electric grill: Remove the meat from the marinade, pat dry. Grill the meat over/on a very high heat (approx. 240 °C for approx. 3 mins. on each side. Place the steaks on a platter, cover and leave to rest for approx. 5 mins. Salt the steaks and cut into thin slices, serve with the sauce.
