Watermelon granita
Ingredients

1 | watermelon (approx. 2 1/2 kg), halved, pulp scooped out, skins set aside |
80 g | sugar |
6 sprig | thyme |

Watermelon juice
Puree the watermelon pulp, pass through a sieve into a measuring cup (produces approx. 1.2 l of juice).
Watermelon granita
Bring 200 ml of the reserved watermelon juice to the boil along with the sugar and thyme, reduce the heat, simmer for approx. 2 mins. Pour the juice through a sieve and into the remaining watermelon juice, mix and pour into the reserved watermelon skins. Cover and freeze for approx. 15 hrs., scrape the mixture 3-4 times with a fork until frozen.
