Ingredients

for 4 person

Meat
  sesame oil for frying
500 g minced meat (beef and pork)
½ tsp salt
10 g dried shiitake mushrooms
shallot, finely chopped
garlic clove, finely chopped
½ tbsp ginger, finely chopped
Soup
red chilli, deseeded, cut into thin rings
5 tbsp miso paste
2 tbsp soy sauce
1 tbsp sesame seeds
1 tsp sugar
1 litre water
2 tbsp rice vinegar
pak choi (approx. 300 g each), thinly sliced
150 g dried soba noodles
Boiled eggs
fresh eggs
  water, boiling
Garnish
nori sheet, cut into pieces
spring onion incl. green part, cut into thin rings
1 tbsp preserved ginger

How it's done

Meat

Heat the oil in a tall pan. Stir fry the meat in batches for approx. 2 mins. per batch, remove from the heat, season with salt. Place the mushrooms, shallot, garlic and ginger in the pan along with the meat, fry for approx. 2 mins., reduce the heat.

Soup

Add the chilli to the meat along with all the other ingredients up to and including the sugar, cook briefly. Add the water and rice vinegar, bring to the boil. Add the pak choi and soba noodles, cook the noodles until al dente.

Boiled eggs

Cook the eggs in boiling water for approx. 7 mins., rinse briefly in cold water, peel and cut in half.

Garnish

Serve the soup in bowls. Garnish with the nori, spring onion, ginger and eggs.
