Traybake with berries
Ingredients
for 36 pieces
450 g | zopf flour |
¾ tsp | salt |
60 g | sugar |
¾ cube | yeast, crumbled |
150 g | butter, soft, cut into pieces |
1 ½ dl | milk, lukewarm |
2 | eggs, beaten |
50 g | butter, cut into pieces |
80 g | sugar |
1 parcel | vanilla sugar |
500 g | frozen berry mixture (organic) |
50 g | flaked almonds |
a little | icing sugar |
How it's done
Yeast dough
In a bowl, mix the flour with all the other ingredients up to and including the yeast. Add the butter, milk and eggs, mix together, knead to form a soft, smooth dough, cover and leave to rise at room temperature for approx. 1 1/2 hrs. until doubled in size.
To assemble
Flatten the dough a little, roll out to match the size of the tray (square tray lined with baking paper), transfer to the tray. Spread the butter over the dough, mix the sugar and vanilla sugar, sprinkle over the top. Arrange the berries on top, press down gently, scatter the flaked almonds on top.
To bake
Approx. 35 mins. in the lower half of an oven preheated to 200°C. Remove from the oven, allow to cool slightly, cut into pieces, remove from the tray and leave to cool on a rack. Dust with icing sugar.
