Chickpea fries
Ingredients
for 4 person
2 tin | chickpeas (approx. 240 g), rinsed, drained |
80 g | white flour |
½ tsp | salt |
peanut oil, for deep-frying |
50 g | mayonnaise |
2 | garlic clove, pressed |
2 tsp | harissa (hot spicy paste) |
How it's done
Chickpea mixture
In a food processor, finely grind the chickpeas and transfer to a bowl. Add the flour and salt, knead by hand to form a compact mass.
Shape the mixture into a rectangle approx. 8 cm wide and cut into sticks approx. 1 cm thick.
Deep-fry
Fill a pot to 1/3 with oil and heat it to approx. 170°C. Using a slotted spoon, add the chickpea sticks in batches and fry for approx. 1½ min, turning. Remove and drain on paper towels.
Spicy garlic mayo
Combine the mayonnaise, garlic and harissa and serve with the fries.
