Goji berry chia pudding is a classic fusion of trend foods. This recipe is great as a healthy dessert, however it can also be enjoyed for breakfast. Coconut milk is a must if you're going to make a creamy vegan dessert. Add to the mix sweet red berries, a little vanilla and ginger, and you have an incredibly delicious, creamy concoction – the perfect dessert for any guest who wants to end a meal on a slightly healthier note. Ingredients

for 2 person

Pudding
30 g dried goji berries, soaked overnight in water
100 ml almond drink
50 ml coconut milk
1 tbsp maple syrup
¼ tsp bourbon vanilla powder
¼ tsp ginger powder
2 tbsp chia seeds
Toppings
2 tbsp coconut milk yoghurt
½  blood orange, in segments (without membrane)
2 tsp dried goji berries
a little  coconut flake

How it's done

Pudding

Drain the goji berries, blend in a food processor or blender with the almond milk, coconut milk, maple syrup, vanilla and ginger until smooth. Stir in the chia seeds, divide the mixture into 2 glasses (each approx. 200 ml). Cover and leave to absorb for at least 2 hrs.

Toppings

Top the pudding with yoghurt, orange segments, goji berries and coconut flakes.
