Goji berry chia pudding
Ingredients
for 2 person
| 30 g | dried goji berries, soaked overnight in water |
| 100 ml | almond drink |
| 50 ml | coconut milk |
| 1 tbsp | maple syrup |
| ¼ tsp | bourbon vanilla powder |
| ¼ tsp | ginger powder |
| 2 tbsp | chia seeds |
| 2 tbsp | coconut milk yoghurt |
| ½ | blood orange, in segments (without membrane) |
| 2 tsp | dried goji berries |
| a little | coconut flake |
How it's done
Pudding
Drain the goji berries, blend in a food processor or blender with the almond milk, coconut milk, maple syrup, vanilla and ginger until smooth. Stir in the chia seeds, divide the mixture into 2 glasses (each approx. 200 ml). Cover and leave to absorb for at least 2 hrs.
Toppings
Top the pudding with yoghurt, orange segments, goji berries and coconut flakes.
