Ingredients

To marinate
flank Steak
lime, use only the juice
red chilli pepper, deseeded, finely chopped
1 tbsp tamarind paste
To grill the meat
½ tsp sea salt

How it's done

To marinate

Place the meat in a wide bowl. Mix the lime juice, chilli pepper and tamarind paste. Pour the mixture over the meat, cover and marinate at room temperature for approx. 1 hr.

To grill the meat

Charcoal/gas/electric grill:

Grill the meat over/on a very high heat for approx. 4 mins. on each side. Transfer the steak to a plate, cover with foil and leave to rest for approx. 5 mins. Salt the steak and cut into thin slices. Serve immediately.
