Grilled watermelon with feta salad

Ingredients

for 2 person

Feta salad
2 tbsp lemon juice
3 tbsp olive oil
¼ tsp salt
120 g rocket
100 g feta, cut into approx. 1 cm cubes
Grilled watermelon
1 tbsp olive oil
300 g watermelon, sliced
  salt and pepper to taste

How it's done

Feta salad

Mix together the lemon juice, oil and salt. Add the rocket and feta, mix.

Grilled watermelon

Heat the oil in a griddle pan. Grill the melon slices for approx. 2 mins. on each side, season. Top with the feta salad, serve immediately.
