Sausage and cheese salad

Ingredients

for 4 person

To grill
300 g new potatoes, quartered
2 tsp olive oil
¼ tsp salt
2 piece aluminium foil
cervelat sausages
Dressing
2 tbsp white balsamic vinegar
3 tbsp rapeseed oil
90 g plain yoghurt
½ bunch chives, finely chopped
¼ tsp salt
a little  pepper
Sausage and cheese salad
200 g semi-hard cheese (e.g. Lucerne creamy cheese), cut into approx. 2 cm cubes
cucumber, peeled, quartered, deseeded, cut into approx. 1 cm pieces
100 g head lettuce with hearts, leaves removed

How it's done

To grill

Mix the new potatoes with the oil and salt, wrap in foil.

Charcoal/gas/electric grill: Grill the potatoes over/on a medium heat (approx. 200 °C for approx. 10 mins. Place the sausages on the grill and cook for a further 5 mins.

Cut the sausages in half lengthwise and then diagonally into approx. 5 mm slices.

Dressing

Combine the balsamic, oil and yoghurt. Add the chives, mix and season.

Sausage and cheese salad

Mix the potatoes, sausages, cheese, cucumber and lettuce with the dressing.
