Matcha energy balls

Energy balls are the perfect in-between snack. Thanks to the pumpkin seeds, this particular recipe is particularly high in protein, while the matcha and dates provide the necessary energy boost. It goes without saying that these energy balls are also incredibly tasty – you'll want to polish them off all in one go.

Ingredients

for 12 pieces

Balls
100 g Medjool dates, pitted
75 g pumpkin seeds
25 g pistachios
1 tsp matcha powder
2 pinch bourbon vanilla powder
To decorate
1 tsp matcha powder, and/or raspberry powder

How it's done

Balls

Place all of the ingredients in a food processor and blitz to create a dough-like mixture. Shape the mixture into 12 equal balls.

To decorate

Toss the balls in matcha powder and/or raspberry powder.
