Vegetable fajitas
Ingredients
for 2 person
| a little | oil |
| 1 | red pepper, cut into strips |
| 1 | onion, cut into strips |
| 1 | courgette, cut into cubes |
| ½ tbsp | Seasoning preparation for meat (e.g. Coop spicy meat seasoning) |
| salt to taste |
| 4 | flour tortillas |
| 2 tbsp | crème fraîche |
| 1 | avocado, cut into pieces |
How it's done
Vegetables
Heat the oil in a frying pan. Add the pepper, onion and courgette, stir fry for approx. 3 mins. Season the vegetables. Remove the pan from the heat.
Fajitas
Prepare the tortillas according to the packet instructions, spread the crème fraîche over the tortillas, top with the vegetables and avocado. Roll up the tortillas.
