Za'atar, also spelt zatar, is a spice blend from the Mediterranean region of the Middle East and is one of the most important spices in many dishes from North Africa, the Middle East and Turkey. The main ingredient and herb from which the blend gets its name is za'atar, a wild thyme from the Middle East. Other ingredients include sumac, toasted sesame seeds and salt. Depending on the region and preference, za'atar may also contain other ingredients such as coriander, aniseed, fennel, sunflower seeds and nuts. Za'atar can be found in most supermarkets as a ready-made spice blend.

Ingredients

for 4 person

Cauliflower
600 g cauliflower, cut into florets
2 tbsp olive oil
1 tbsp Za'atar (spice mix)
½ tsp salt
Za'atar cauliflower
1 tbsp lemon juice
2 tbsp olive oil
Medjool dates, pitted, cut into thin strips
3 tbsp pomegranate seeds
2 tbsp flat-leaf parsley, finely chopped
¼ tsp salt

How it's done

Cauliflower

Mix the cauliflower, oil, za'atar and salt in a bowl and transfer to an oven tray lined with baking paper.

Za'atar cauliflower

Mix the cauliflower with the lemon juice and the remaining ingredients, serve while still warm.
